1- Wash chicken well and place in large pan . Add water and allow to lighlty boil. Skim
water of fat and small pieces of flesh.Ingredients:
2- In a separate pan, add oil, tomato paste and tomatoes and cook until tomatoes are softened.
3- Remove chicken from water and cut into large pieces. Place in large baking dish.
4- Add tomato mixture, baby onions, peas and enough water (used to boil chicken in) to cover
chicken pieces and peas. Add salt to taste.
5- Place slivers of green pepper, if desired, on top and cook in medium hot oven until
chicken browns.
